Ingredients

Adjust Servings:
1/2 cup Rocket Washed and drained
1/4 cup Quinoa Cooked
4 pcs Cherry Tomato quartered
1/2 Avocado cut to cubes
2 mini balls or 1/2 large Mozzarella cut to cubes (Optional)
5 pcs Almonds
5 pcs Walnut Broken to pieces
1 tsp Lemon Zest
2 tbsp Dried Cranberries
1 tsp Chia Seeds
1 tsp Ground Flax Seeds
1 slice Nutty Wholemeal Bread cut into cubes
2 Tbsp Parmesan Cheese Grated
Dressing
1 tsp Olive Oil
1/4 tsp Lemon Juice
Pinch Salt
Dash Black Pepper

Quinoa salads are great as the quinoa and avocado gives energy without being carb heavy and this salad only has the good stuff with greens, quinoa, avocado, fruits, tomato, nuts, chia and flaxseeds and cheese, what more can you ask for? I love salads because they are so easy and super nutritious. Plus, you can make them look like a million bucks so easily. What I call effortless fancy. You know when you want to impress some guests and look like a gourmet chef. (One reason I always cringe when I have to pay so much for a sale outside)

I love salads for breakfasts because it is so fresh, full of flavour, light and nutritious. Start the morning right and the rest of the day will be a breeze! I usually have salads for quick and healthy breakfast or when I want to whip up something fast as a side for lunch or dinner.

The quinoa in the salad makes it great as a nutritious meal by itself  even for lunch and dinner and I don’t get bored with chomping on too much leaves or get hungry too quickly.  In fact, one thing about my salads is that I try to make sure they are not too boring.

For those who wants some animal protein, feel free to add a hard boiled or poached egg, smoked salmon, tuna, cut ham or shredded chicken. If you are not a fan of rockets, then feel free to switch to baby spinach or mesclun greens, etc.

This quinoa salad is so tasty because it contains so many tasty ingredients that complements each other in flavours. The fresh tangy sweetness of the tomatoes with the soft and nutty mozzarella and salty parmesan, crunchy nutty flavours of quinoa, almonds and walnuts with sweet dried cranberries. The crunchy sharp green taste of the rockets with creamy avocado and the crunch of home made croutons. All very distinct flavours yet blending  harmoniously together for a tasty salad. I don’t usually put any dressing other than a drizzle of fruity extra virgin olive oil, a pinch of sea salt and a dash of freshly ground black pepper. But if you like, you can add the juice of a slice of lemon for a citrusy note and to keep the avocado from browning.
