1 tin Tuna in olive oil, drained
1/2 Red Fuji Apple diced
1 Shallot peeled and diced
6 Cherry Tomato diced
6 Basil leaves large and finely chopped
1 sprig Coriander finely chopped
4 tsp Chia Seeds
4 tsp Ground Flax Seeds
1 tsp Honey
1/2 cup Sour Cream
1/4 tsp Salt To taste
1/2 tsp Black Pepper To taste
8 slices Wholemeal Walnut Bread

Healthy, Tasty Apple Tuna Sandwich

Tuna is one of the healthiest foods apparently. Compared to salmon, tuna is definitely from the wild and it is rich in omega-3 fatty acids and high in protein, selenium, niacin, etc. Unfortunately, we cannot find fresh tuna easily in the markets and they are quite pricey. So next best alternative is canned tuna. Well, do you know that even canned tuna is healthy. Well, usually. As always, you have to read the labels and choose a healthier option. I always buy tuna chunks in olive oil or brine but I find olive oil most versatile. This is one of the few canned foods I eat and I always keep a tin or 2 at home for lazy days and breakfast on work days are always about lazy…

Sad to say, we don’t have a lot of very good brands of tuna in Singapore. Well, I used to think what we have is great. Till I was passed a tin of Rio Mare brand. This is an Italian brand unfortunately not selling in Singapore. It does not have a strong fishy taste and is very tender and comes in huge chunks very prettily packed in the tin. I am on a quest to try other brands selling in SG to find one that will fall closest to this.

So here I share another classic tuna sandwich refreshed with basil, apple and tomatoes. Instead of using mayonnaise, try the healthier sour cream, sandwiched by 2 slices of soft wholemeal bread for the added fibre. The umami of the tuna with sweet apple, fresh basil and tomatoes makes this sandwich a light yet satisfying meal.

I must give credit to an ex-colleague who introduced me the idea of adding apples to tuna sandwich many years ago when she prepared this for an event in the office. I have modified the recipe over the years to suit my own tastes and made it healthier by replacing the mayo with sour cream and honey. So feel free to tweak the recipe yourself to find something that suits you. Sometimes I will add cucumber or avocado. Tuna goes with so many things! Tuna sandwich rocks!

For bread, I recommend using wholemeal or other healthier varieties. I bake my own breads and well, it is really not difficult. The wows I get from people around me is quite unjustified because baking bread is really quite easy. You can refer to the baking category for more bread recipes.

Mix the ingredients

Mix the drained tuna, apple, cherry tomato, shallot, coriander, basil, chia and flax seeds together in a container.

Season

Add sour cream and honey, salt and pepper and mix evenly.

Chill and pack.

Chill for 30 minutes or overnight. Serve on bread like a sandwich. Optional toppings include cheese slices, lettuce, cucumber slices. If packing to go, place into a sandwich bag or shrink wrap before placing in tupperware to keep sandwich together.
